… a.k.a step-by-step instructions to conquer your first beef roast.
Very few things in life terrify me — in fact, they tend to energize my soul and leave me craving more. I’ve skydived from 14,000 feet over the ocean and scuba-dived in the Great Barrier Reef. If it involves speed, heights or something wildly unique for the bucket list, I’m typically first to sign up.
With my natural competitive spirit and desire to have a How I Met Your Mother’s “Challenge Accepted” attitude, I’m sure you can see why it was impossible for me to say no to a new experience. The only problem, this wasn’t just any challenge. It wasn’t one that involved speed and danger, but tenderness and patience; not one that involved heights or jumping out of airplanes, but my own kitchen. This challenge was so far outside of my comfort zone, I’d never considered it before. For the first time in my life, I was going to tackle a roast — yes, I planned to make a beef roast for dinner! (I would have been far more comfortable giving a vocal “roast” at the dinner instead.)
You may think me overly dramatic, but people were trusting me to provide them with a delicious meal — with a roast as the centerpiece! It was something I had never done before. All of my other adventures involved only me. How was I supposed to pick out the right roast? Or find a suitable recipe for everyone? What if I over-cooked it and embarrassed myself in front of the guests? The last thing I needed was to have people knowing how uncomfortable I am in the kitchen!
Believe me when I say I was the ideal test dummy for our the Certified Angus Beef ®brand’s new app, Roast Perfect. In my life, I’ve spent far more time out on the farm chasing cows and feeding pigs than preparing food in the kitchen. I had no experience buying meat from the butcher’s counter, let alone preparing it. This really was going to be the ultimate test. Was it true? Can anyone cook the perfect roast?
The answer is … YES!
Picking out the roast was incredibly easy, making my first trip to the meat counter a piece of cake. I was able to use the Roast Perfect app on my phone right in the middle of the store! I didn’t have to worry about selecting the right roast or finding a recipe because the app offered me tips and recipes to try. It even told me how large of roast I needed to feed 4 people! I decided to try the Deliciously Bold Eye of Round Roast recipe because I had most of the ingredients at home. And I tend to have a bit of a bold personality, of course!
- 1 (2½-pound) Certified Angus Beef ® eye of round roast
- 1 cup beef broth
- 1 tablespoon vegetable oil
- 1 tablespoon Worcestershire sauce
- 2 tablespoons red wine, like Cabernet Sauvignon
- 2 tablespoons red wine vinegar
- 1 teaspoon dried Italian seasoning
- Combine all marinade ingredients. Place roast in zipper-locking plastic bag and pour marinade over beef. Close bag, removing air. Refrigerate at least 2 hours.
- Remove roast from marinade and pat dry. Discard marinade and preheat oven to 450°F. Place roast in a shallow roasting pan fitted with a rack and season with salt and pepper. Roast for 15 minutes, then reduce oven to 325°F. Cook approximately 70 minutes, until roast reaches medium rare (125-130°F).
- Remove from oven, tent loosely with foil, and let rest 10 minutes before carving thinly against the grain.
Roasting is a journey and the kitchen is an adventure. It may not be the typical thrill I seek, but it’s one I can share with family and friends. (Believe it or not, many of my friends engage in activities that don’t require a liability statement.) Providing the meat of celebration for your loved ones is an unparalleled thrill of joy and delight. Stay tuned, I think I’ve found a new (tasty) hobby!
